Amarula Cheesecake Recipe

This Amarula cheesecake recipe has been in our family for many years. My mother used to prepare this recipe whenever we received International guests. Everyone I know loves this delicious cheesecake dish. It is quick and easy to prepare, tastes good, and looks amazing. A feast for all the culinary senses.

Amarula cheesecake is prepared from classic cheesecake ingredients, with the prime ingredient being Amarula liqueur. Amarula is a cream liqueur from South Africa. It is made with sugar, cream and the fruit of the African marula tree which is also locally called the Elephant tree or the Marriage Tree. Wild animals like warthogs, monkeys, elephants and giraffes go crazy over the marula fruit. The animals even have Marula parties, or so we call it locally. It is spectacular and quite funny.

Directions

  1. Use a rolling pin to finely crush the digestive biscuits
  2. Combine the biscuits and butter in a mixing bowl
  3. Transfer the mixture to a round springform baking tin
  4. Use your fists to press the mixture down and spread it into an even layer
  5. Pour the Amarula liqueur into a metal mixing bowl and sprinkle the gelatine over the top. Place the bowl over a pot of boiling water and heat through, stirring all the time until the gelatine dissolves into the Amarula liqueur. Remove from the pot and allow to cool.
  6. In a separate mixing bowl, beat the cream cheese and sugar until light and fluffy
  7. Do the same with the cream in a separate bowl, until stiff peaks form
  8. Strain the liqueur mixture into the cream cheese mixture, then fold in the whipped cream and mix until well incorporated
  9. Pour the filling into the springform baking tin, spread evenly over the crust using a spatula, pressing down to remove bubbles
  10. Refrigerate overnight. When ready to serve, sprinkle the grated chocolate over the top. Enjoy!
