Directions

  1. For the Chicken Melt one tablespoon butter and add the oil to a heavy-based saucepan over moderate heat
  2. Add the chicken pieces to the saucepan, season with salt and pepper, and sauté the chicken until golden brown
  3. Add the chicken stock and simmer for five to eight minutes, until soft and tender
  4. Remove with a slotted spoon and set aside
  5. For the Sauce Melt one tablespoon butter in a large heavy-based saucepan over moderate heat, and add the mushrooms and cook until soft. Add the bell peppers and the spring onions to the saucepan, then add the rest of the chicken stock and cook for about fifteen minutes
  6. Slowly add the flour and stir until all the flour has been blended with the sauce
  7. Reduce the heat and simmer until the sauce thickens about two to three minutes
  8. Slowly add the cream and stir quickly for another two to three minutes
  9. Add the chicken and mix well
  10. Season to taste with black pepper and salt
  11. Serve straight away with cooke rice, or on a bed of tagliatelle pasta. Enjoy!
