This coronation chicken recipe has special memories. I met an English couple a few years ago, who eventually became two of my best friends. I introduced them to local delicacies and they certainly returned the favor with this coronation chicken recipe.
Coronation chicken or Poulet Reine Elizabeth is a combination of cold-cooked chicken meat, herbs and spices, and a creamy mayonnaise-based sauce. It can be eaten as a salad or used to fill sandwiches. Poulet Reine Elizabeth, more commonly known as coronation chicken, is believed to have been inspired by the 'Jubilee Chicken' created for George V's silver jubilee in 1935.
I am certain this coronation chicken recipe is far from the original, but what I do know is that most people who have tasted our coronation chicken dish, really enjoyed it. We have adapted the ingredients slightly to celebrate modern flavors.
