This minestrone soup recipe leaves frond and romantic memories. I remember the first time I met my girlfriend, who is now my wife. We were both asked to be the go-to grillers at a function on a well know guest farm. She was a chef and I called myself a self-acclaimed chef.


Stellenbosch, the movie, well now, a series was shooting in South Africa and the actors lived in the guesthouse of my friends. My wife and I were asked to prepare them a meal and this minestrone soup recipe was a hit on the list. It was so good that I invited myself to the restaurant where she worked to have more of this minestrone soup.


I always tell people that we got married because of this minestrone soup recipe. She is fond of this story and I have told it over and over to everyone we meet. It is very different from the ways many people meet and I am very fond of this minestrone soup story.

Directions

  1. In a cooking pot over medium heat, heat the olive oil. Add the onions and fry until soft and glossy. Add the garlic, celery, and carrot and cook until soft. Add the green beans, oregano, and basil. Salt and pepper to taste and cook for another 5 minutes
  2. Add the diced tomatoes from the can and add the chicken stock. Increase the heat to a simmer and simmer for about 10 minutes
  3. Add the pasta and kidney beans and cook until tender. Season to taste with salt and pepper
  4. Ladle into bowls and top with parmesan chees and the chopped basil. Serve and enjoy.
