Mussels in Garlic and White Wine Sauce Recipe

This mussels in garlic sauce recipe is a family tradition. Our whole family takes part in the picking, preparing, and cooking activities of this recipe.

Our family normally spends the festive season in the picturesque St Helena Bay on the West Coast of South Africa. On certain days we travel to Paternoster, a beautiful season village where mussels grow wildly on the rocks of the shallow waters and are available to pick during low tide.

You need the permit to pick the mussels, but one permit per family should do, as you can pick quite a lot and everyone, including the children, can take part in the mussel picking, and cleaning activities. To clean the mussels, simply soak them in fresh water for 1½ hours. Use a sharp knife and scrape off the head, where the mussels were attached to the rocks. Scrub the shells thoroughly to remove the sea sand. 

My wife, the chef, normally cooks this mussels in garlic and white wine sauce recipe. The white wine and garlic really add flavour to the mussels. If you are not up to picking mussels or do not own a permit, then you can optionally settle for frozen mussels, available from most local supermarkets.

As far as the white wine goes, you cannot go wrong with Sauvignon Blanc. Arguably the most versatile wine for marinades, seafood dishes, and veggies, this white's pronounced acidity and herbal notes are sure to add depth and zest to everything from stews to Italian dishes.

Directions

  1. Preheat the oven to 200° C
  2. Clean the mussels using the steps described in the description
  3. Place the mussels in a shallow saucepan with the wine and cover
  4. Cook over hight heat, shaking well, until the shells open. More ore less 5 minutes
  5. Discard any mussels that have not opened and remove the empty half shells from the mussels that have opened
  6. Place the remaining mussels into ovenproof ramekins. Strain the cooking liquor and set aside
  7. Work the garlic into the butter with the herbs,salt and parmesan cheese and spread a little over each mussel. Sprinkle a little of the cooking liquor over the mussels
  8. Place under the grill of the preheated oven until the garlic sauce has melted and the cheese becomes slightly browned
  9. Serve straight away.
