  1. Preheat the oven to 180°C
  2. Mix the onion and ostrich mince together, then add the eggs, and breadcrumbs
  3. Add 50 ml of the sweet chilli sauce, the tomato paste, and parsley, and mix well
  4. Season to taste with salt and pepper. Prepare a loaf tin with cooking spray and transfer the ostrich mince mixture to the loaf tin
  5. Bake for 25 minutes in the preheated oven. Cut into slices and serve, with the remaining sweet chilli sauce on the side, on a bed of couscous and a garden salad. Enjoy!

South Africa is an amazing place. I remember seeing the cooks prepare meatloaf in a clay dish during one of our stays at a game reserve.
