Ostrich Meatloaf Recipe

This easy ostrich meatloaf recipe is the result of a combined effort between my wife and me, after experimenting with many different tomato-based sauces, and found one that works exceptionally well with the ostrich. We love ostrich meat and its associated health benefits. Ostrich meat is also compatible with the paleo diet, a good excuse in itself to convert to ostrich meat.


There is a little twist to this ostrich meatloaf recipe. Most meatloaf recipes use a tomato sauce-based topping, something we tried. After a few attempts, I discovered that sweet chilli sauce compliments the ostrich meat very well and enhances the flavour dramatically. My mother-in-law is my greatest food critic, and even she, had a smile on her face when she tasted this ostrich meatloaf. Children are not even able to tell the difference between this ostrich meatloaf recipe and traditional meatloaf. A good way to get your children to eat healthy meat.

Directions

  1. Preheat the oven to 180°C
  2. Mix the onion and ostrich mince together, then add the eggs, and breadcrumbs
  3. Add 50 ml of the sweet chilli sauce, the tomato paste, and parsley, and mix well
  4. Season to taste with salt and pepper. Prepare a loaf tin with cooking spray and transfer the ostrich mince mixture to the loaf tin
  5. Bake for 25 minutes in the preheated oven. Cut into slices and serve, with the remaining sweet chilli sauce on the side, on a bed of couscous and a garden salad. Enjoy!

South Africa is an amazing place. I remember seeing the cooks prepare meatloaf in a clay dish during one of our stays at a game reserve.
