Pork Casserole Recipe

This easy pork casserole recipe is perfect for a mid-week evening. The ingredients are simple and can be prepared in under ten minutes and the pork casserole only takes twenty minutes to cook. Besides the leftover pork can be used to make the perfect pulled pork sandwich.


 There is a small twist to this pork casserole recipe. You should notice something different when we get to the ingredients. When we approached our chef to develop this recipe we asked for something classic and traditional and she came up with something different. The twist makes this pork casserole recipe even tastier.


This pork casserole recipe freezes really well making it perfect to defrost on a day when time is a bit limited. We enjoy serving our pork casserole with cooked rice, but it also works well with soft-cooked polenta.

Directions

  1. Preheat the oven to 220°C
  2. Meanwhile, fry the onions in a frying pan over medium heat until soft and glossy. Add the bacon and the stewing pork. Fry until the bacon is crispy. Drain and crumble the bacon pieces
  3. Transfer the mixture to an ovenproof casserole and add the remaining ingredients. Sprinkle with the breadcrumbs and bake in the preheated oven until the crumbs are browned about 15 to 20 minutes. Serve at once. Enjoy!
