Thai Green Curry Recipe

There is something about this quick and easy Thai Green Curry recipe. It reminds me of a time in my life when I was in a good place. I used to exercise often and had a strict exercise routine.

I am not sure what it is about this Thai green curry recipe, but I remember, every time, we had this Thai green curry for lunch or dinner, I will perform exceptionally well, and set up my best times on the stopwatch.

I am not saying it is a replacement for sport nutrition supplements, or that it was my imagination, but that is the way it was. So, it became one of my habits, to enjoy this Thai green curry every night before exercising the next day.

I think the magic ingredient, that caused me to perform well, is coconut milk. One of the ingredients in the Thai green curry recipe. Coconut milk is rich in electrolytes such as potassium, magnesium, and phosphorous. Potassium is important for the maintenance of a normal heart rhythm. It is also crucial for healthy muscle functioning.

No wonder this Thai green curry recipe was a healthy option on days before or after strenuous exercise. It clearly made me perform good and now I know why.

  1. in a large frying pan, heat the olive oil and add the chicken cubes. Fry until golden. Add all the vegetables and stir-fry for a few more minutes, about five minutes
  2. Reduce the heat to a simmer and stir in the coconut milk and green curry Thai green curry paste
  3. Simmer for a few more minutes over low heat
  4. Remove from the frying pan and serve on a bed of cooked Basmati rice. Garnish with fresh coriander. Enjoy!
