There is something about this quick and easy Thai Green Curry recipe. It reminds me of a time in my life when I was in a good place. I used to exercise often and had a strict exercise routine.

I am not sure what it is about this Thai green curry recipe, but I remember, every time, we had this Thai green curry for lunch or dinner, I will perform exceptionally well, and set up my best times on the stopwatch.

Directions

  1. in a large frying pan, heat the olive oil and add the chicken cubes. Fry until golden. Add all the vegetables and stir-fry for a few more minutes, about five minutes
  2. Reduce the heat to a simmer and stir in the coconut milk and green curry Thai green curry paste
  3. Simmer for a few more minutes over low heat
  4. Remove from the frying pan and serve on a bed of cooked Basmati rice. Garnish with fresh coriander. Enjoy!
