Directions
- Preheat the oven to 200° Celcius
- Combine the tomatoes, onion, garlic and most of the olive oil in a large ovenproof baking dish
- Season with the kosher salt and crushed chilli flakes and toss to combine
- Place the feta into the center of the tomato mix and drizzle on top with the remainder of the olive oil
- Scatter the chopped thyme over the mix and bake for 40 - 45 minutes until the tomatoes are bursting and the feta becomes golden op top
- In the meantime, cook the pasta in a large pot of boiling water until al dente
- Reserve half a cup of pasta water before straining
- Back to the baking dish with the tomatoes, add the cooked and strained pasta, reserved pasta water and lemon zest
- and combine by stirring through
- Garnish with parsley or basil and enjoy!
