That is until I stumbled upon this baked feta pasta recipe. It was hard to miss as it was going viral, and it is easy to understand why. This Baked feta pasta recipe is easy to prepare. It is not the quickest recipe, but it is ideal for a day over a weekend when you have the time. The great thing is that it lasts in the refrigerator for quite a few days, so you can save it for a rushed mid-week lunch or dinner treat. Directions
- Preheat the oven to 200° Celcius
- Combine the tomatoes, onion, garlic and most of the olive oil in a large ovenproof baking dish
- Season with the kosher salt and crushed chilli flakes and toss to combine
- Place the feta into the center of the tomato mix and drizzle on top with the remainder of the olive oil
- Scatter the chopped thyme over the mix and bake for 40 - 45 minutes until the tomatoes are bursting and the feta becomes golden op top
- In the meantime, cook the pasta in a large pot of boiling water until al dente
- Reserve half a cup of pasta water before straining
- Back to the baking dish with the tomatoes, add the cooked and strained pasta, reserved pasta water and lemon zest
- and combine by stirring through
- Garnish with parsley or basil and enjoy!
