Roast Lamb with Rosemary and Lemon Recipe
This roast lamb with rosemary and lemon comes courtesy of my mother-in-law. It is a variation of the traditional roast lamb she prepares on special occasions. Most people I know use cloves in roast lamb, so does my mother-in-law. We brainstormed and found a suitable replacement for cloves, rosemary, and lemon.
This easy roast lamb with rosemary and lemon recipe is the ideal Christmas, or any other special occasion, companion. It is the ideal recipe for days where you have time, especially during December breaks. You have plenty of time to prepare the side dishes while the lamb is roasting in the oven.
With its woody flavour, rosemary is the perfect companion for your favourite lamb dish. Rosemary is a rich source of antioxidants and anti-inflammatory compounds, which are thought to help boost the immune system and improve blood circulation. Rosemary is considered a cognitive stimulant and can help improve memory performance and quality. Besides these benefits, rosemary is also good for hair growth.
As for side dishes to accompany this roast lamb with rosemary and lemon recipe, we found that whole roasted carrots, cauliflower with roasted tomatoes, and roasted Mediterranean vegetables work best.

Directions
- Preheat the oven to 180°C (350°F)
- Combine the garlic, herbs, lemon rind and juice, salt and pepper, breadcrumbs, and butter in a bowl
- Coat the leg of lamb all over with the mixture and place it in the oven roasting bag. Seal the bag well and punch a few holes in the bag with a toothpick
- Roast in the oven until the lamb is cooked through, 25 minutes per 500 g of lamb, plus a little extra for the roasting
- Serve with a choice of roasted vegetables. Enjoy!
