  1. In a mixing bowl, combine the pumpkin, baking powder, and flour and mix well to form a soft batter. Add the egg and beat well
  2. Heat the oil in a frying pan. Drop spoonfuls of the pumpkin batter in the oil and fry on both sides until the fritters are golden brown. Remove and keep warm. Serve hot and sprinkle with the cinnamon-sugar mixture.
