This classic and easy tiramisu recipe stands out as one of my top three favorite dessert recipes. I discovered tiramisu late in my life, only after marrying my chef wife, and it was love at first sight, I mean, my wife, and then the tiramisu ?


Tiramisu translated to 'lift me up' in Italian and no other words could describe this recipe any better. It comes at the right time, during the afternoon slump, after a big lunch, when you need something to lift you up.


There are many variations to this tiramisu recipe. I have tried many different servings from different restaurants and coffee shops, but nothing comes to my wife's homemade tiramisu recipe. It is true that you always go back to what works best for you.


One of the secrets of this tiramisu recipe lies in the coffee that you use when preparing this recipe. We buy our coffee in bulk from a local coffee roaster, then we grind it as we need the coffee and that is the coffee we use, A good quality coffee.

Directions

  1. Beat the Mascarpone cheese in a small bowl until soft. In a separate bowl, beat the egg yolks with the sugar reserving 1 tbsp (15 ml) to use later with the coffee. The mixture must be pale yellow and fluffy
  2. Gradually beat in the softened mascarpone cheese
  3. Use an electric whisk, and beat the egg whites with the salt until they form stiff peaks. Fold in the egg whites into the mascarpone cheese mixture
  4. Line your individual ramekins or large bowl with a layer of sponge fingers
  5. Add the reserved sugar to the coffee and sprinkle the coffee over the sponge finger biscuits. The sponge fingers must be moist and not soggy
  6. Cover with half or the egg mixture
  7. Add another layer of sponge finger biscuits, repeat to moisten it with coffee and cover it with the remaining egg mixture
  8. Sprinkle with cocoa powder and grated dark chocolate
