Ginger Biscuits Recipe

This ginger biscuits recipe has good childhood memories. I remember when I was little. My brother and I were raised by a single mother. There were times when my mother would drop us off at my gran, where would spend most of our school holidays and indulge in delicious homemade ginger bread biscuits and my Nan's world famous homemade Eat-Sum-Mor bisucuits.


I have learned two very important things during this time at my gran. One is called discipline, and the other is called ginger biscuits. The two things are related. If you steel the ginger biscuits from the cookie jar, you learned discipline. As simple as that.


The thing is, these ginger biscuits are irresistible and if a kid knows where it is hidden, they will take chances. The hiding I got as a kid was worth the risk. I am only too sad that I never had the opportunity to ask my gran for her ginger biscuits recipe. But I may have found an even better one the one I am sharing here.

Directions

  1. Preheat the oven to 180°C (356°F)
  2. In a frying pan, melt the butter and sugar together on low heat until melted then allow to cool
  3. Add the eggs one by one and whisk until the eggs are well incorporated
  4. Add the sugar and mix until it has dissolved
  5. Sift all the dry ingredients and add it to the egg mixture
  6. Once again mix through thoroughly
  7. Place the dough in the fridge for 1 hour to rest or overnight (I highly recommend this step if you know beforehand you will bake the next day)
  8. Take the dough out of the refrigerator
  9. Roll down with a rolling pin on a surface prepared with sugar and flour
  10. Cut into desired shapes eg. hearts, gingerbread men cutters or rounds
  11. Bake in batches for approximately 10 to 15 minutes until golden brown. Allow to cool then serve. Enjoy!
