The first time I laid eyes on this greek lamb chops recipe was during a brief holiday at Club Mykonos. We had a packed schedule and had to make time for lunch on the terrace of the Bouzouki Restaurant.
The menu of the bouzouki restaurant has many items, but seeing the restaurant had a somewhat Greek name, the Greek lamb chops immediately grabbed my attention. It looked like the best option on the menu at that time, but most probably the side dishes of the couscous and vegetable appealed to me.
When we got home at the end of the weekend, I immediately set off to try out a variation of the greek lamb chops recipe. Seeing it was a Sunday evening and most supermarkets were already closed, I decided to make good with what we had in our refrigerator. Olives, red wine, and feta cheese. All closely resembling greek style cuisine, and of course the lamb chops.
I turned out a huge success and both myself and my wife enjoyed two lamb chops each, with a little couscous, asparagus, and mixed roast vegetables. My wife enjoyed it so much that this recipe has become an institution in our home and we prepare it on many a Sunday night.
As for the red wine we used. The best red wines for cooking are those with moderate tannins: Merlot, Pinot Noir, Sangiovese(the main grape in Chianti), and lighter-style Cabernets. Heat won't improve the undesirable qualities of bad wine: it will accentuate them.
