Chicken Tortilla Soup Recipe

This chicken tortilla soup recipe is one of my favorite Mexican food recipes. When we think Mexican, we think spicy, and that is what makes this chicken tortilla soup so appealing.


With our group of friends, we take turns cooking and being invited to each other's homes to share exciting new recipes. When it was our turn we presented this chicken tortilla soup. It was an instant hit and all our friends asked for the chicken tortilla soup recipe. I guess people expected to see ordinary soup surrounded by bread baskets and black pepper, well not in this case. No condiments or bread are needed for this soup, only a soup spoon.

Directions

  1. Cut the tortillas into strips, more or less 1.5 cm strips. Heat the olive oil over medium-high heat in a frying pan. Working in batches, fry the tortilla strips in the oil, until lightly browned and crisp. Remove the fried tortilla strips and allow to dry kitchen towel
  2. Add the chopped onions to the frying pan stirring frequently, until translucent. Add the chopped jalapeño chili and cook for two to three minutes more, until the chiles have softened. Add the garlic and cook for another minute
  3. Add the chicken stock, tomatoes, and salt. Increase the heat until the soup begins to boil, then reduce the heat to a low simmer, cover and simmer for fifteen minutes. Add the shredded chicken and cook until the chicken is cooked through
  4. To serve the chicken tortilla soup, Divide the tortilla soup among 4 individual serving soup bowls. Top with the sliced avocado and cheddar cheese
  5. garnish with remaining tortilla strips and cilantro. Serve with lemon wedges or even apple slices. Enjoy your chicken tortilla soup.
