Directions

  1. In a saucepan, simmer the carrots until just tender. Remove and drain
  2. Heat the oil in a frying pan over medium heat some oil and toss the chicken for a few minutes until lightly browned
  3. Add the green and red peppers and celery and toss for a few minutes until the peppers are soft and tender
  4. Add the cooked carrots, mushrooms, bean sprouts, water chestnuts, bamboo shoot strips, chicken stock, and soy sauce and cook until the stock and soy sauce is combined. Serve at once with rice or noodles, or half of both. Enjoy.
