This overnight marinated lamb chops recipe is perfect for the braai (barbeque). We compared a few ideas and decided on a versatile marinade. This means you can play around with the ingredients until you find the perfect match that makes your tastebuds come back for more. 

The addition of the wine, or sherry, makes this overnight marinated lamb chops recipe quite interesting. Lamb chops pair well with many different kinds of red wine so we decided to use red wine as the basis for this marinade. It was a risk we took, but it paid off. 

We tried three variations of this overnight marinated lamb chops recipe. The first one is with the basic ingredients we listed. With the second variation we tested, we replaced the herbs with a curry-based marinade. With the second variation, we used the same red wine but added cinnamon and a few cloves.

As for the red wine we used. The best red wines for cooking are those with moderate tannins: Merlot, Pinot Noir, Sangiovese (the main grape in Chianti), and lighter-style Cabernets. Heat won't improve the undesirable qualities of bad wine: it will accentuate them.

Directions

  1. Combine the juice and grated rind of the orange, sugar, herbs, onion, salt and pepper, oil, and wine or sherry in a mixing bowl
  2. Place the lamb chops in a shallow flat dish
  3. Pour the marinade over the lamb chops and place in the refrigerator overnight. Turn once
  4. Transfer the overnight marinated lamb chops to a flat ovenproof dish and bake in a preheated oven at 190°C (375°F) for 40 minutes
  5. Alternately braai (barbeque) the lamb chops on the grill
  6. Remove the lamb chops and place them in a braai (barbeque) casserole to keep warm
  7. Stir the cornflour into the pan juices and mix thoroughly to thicken
  8. pour the sauve over the chops and serve straight away.Eds Note: If you braaied (barbequed) the marinated lamb chops, the last step will be different. Pour the juices from the braai casserole into a pan, then add the flour to thicken.
