Directions

  1. Heat the oil in a large casserole. Add the onions and garlic and sauté until translucent. Add the pumpkin, coconut milk, and broth. Cover and bring to a boil. Reduce the heat and simmer until pumpkin is fork-tender
  2. Transfer to a high-speed blender, add the ginger and blend until smooth
  3. Transfer to individual bowwls, Season with salt and pepper to taste and sprinkle a few roasted pumpkin seeds over the top
  4. Serve straight away. Enjoy!
