Directions

  1. Melt the butter or margarine in a large saucepan and saute the leeks until soft
  2. Add the potato slices and stock
  3. Season with salt and pepper and nutmeg and bring to a boil
  4. Simmer, covered until the vegetables are soft
  5. Cool the soup slightly and liquidise in a blender to form a puree
  6. Stir in the cream before serving and garnish with a dollop of cream, chopped chives and nutmeg
