Leek and Potato Soup Recipe

This leek and potato soup recipe is the pefect summer and winter's day companion. You can enjoy this leek and potato soup hot or cold. It is not listed as a Gazpacho (cold soup), but it tastes good cold too.


There are few things as enjoyable as a bowl of soup with home made bread. it warms you up from the inside and makes you feel homely. It is a great way to keep warm in the winter.


For those who do not like meat, this leek and potato soup is the pefect companion. Potatoes are a good source of fiber, which can help you lose weight by keeping you full longer. Fiber can help prevent heart disease by keeping cholesterol and blood sugar levels in check. Potatoes are also full of antioxidants that work to prevent diseases and vitamins that help your body function properly.


Leeks are rich in flavonoids, especially one called kaempferol. Flavonoids are antioxidants and may have anti-inflammatory, anti-diabetic, and anticancer properties, as well as other health benefits


Put the healthy leeks and the potatoes together, make a soup and you have a healthy lunch or dinner treat.

Directions

  1. Melt the butter or margarine in a large saucepan and saute the leeks until soft
  2. Add the potato slices and stock
  3. Season with salt and pepper and nutmeg and bring to a boil
  4. Simmer, covered until the vegetables are soft
  5. Cool the soup slightly and liquidise in a blender to form a puree
  6. Stir in the cream before serving and garnish with a dollop of cream, chopped chives and nutmeg
