  1. Weigh the figs
  2. Liquidise the figs to make it smooth
  3. Place the figs, lemon juice, water into, and sugar a large cooking pot. Gradually increase the heat and cook, stirring occasionally, until the sugar has dissolved
  4. Boil rapidly and often skim the scum from the surface, until you achieve the consistency of jam
  5. Pour the fig jam, while it is hot, into sterilized jars and seal immediately. Store in a cool and dry place. Enjoy!
