This banana muffins recipe is super easy to prepare and a snack loved by the whole family. I have a habit of baking banana muffins on a Sunday and both my wife and I take a banana muffin to work every day. She normally takes more than one because her friends at work always harass her for a bite or two.


These banana muffins are too good not to share. My neighbour buys a few dozen off me once in a while to give to their kids to take to school. We receive many requests from strangers for the banana muffins, but we limit who we sell to because we just do not have the time.


This is the reason why I decided to publish this banana muffins recipe. We receive overwhelming requests from strangers. Now all I need to do is share the page where this recipe is hosted.   1. Preheat the oven to 180°C (350³F)
  2. Prepare a muffin pan with baking or cooking spray
  3. In a mixing bowl, mash the bananas, add the sugar, and slightly beat the egg
  4. Slowly stir in the melted butter
  5. Stir in the dry ingredients
  6. Spoon into the prepared muffin pan, dividing the mixture equally
  7. Bake for 20 minutes and test with a skewer or toothpick, should come out dry. Allow to cool, then serve. Chefs Tip: This is a family secret. You can also use overripe bananas. Before mashing the bananas, bake them in the oven for 5 to 10 minutes. This will greatly enhance the banana flavour.
