  1. Whisk and combine the sourdough starter, water, and olive oil in a mixing bowl
  2. Add the flour, salt, and sugar and mix together using your hands
  3. Remove the dough from the bowl and form into a ball. Grease the bowl with cooking spray and return the dough to the mixing bowl and cover tightly with plastic wrap
  4. Leave the dough to rest overnight, then remove and place on a prepared flour surface. Fold the dough over itself a few times to strengthen, then shape the dough into a ball or boule. Place the dough into a bowl with the smooth side down and allow to rest for 2½ hours, or maybe longer, until the dough has risen to almost double in size
  5. Preheat the oven to 200°C (400°F) and place one of the baking trays on the bottom shelf of the oven
  6. Transfer the dough to a flat baking tray and gently form it into a ball or boule again
  7. Gently score the top of the dough with a sharp knife
  8. Bake for 55 to 60 minutes until crispy and golden brown. Enjoy.
