This is a quick easy soft polenta recipe. The trick is to make the polenta in the microwave instead of the stovetop. The polenta recipe yields two good-sized portions, but you can adjust it to the portions of your choice.
Adding the butter is optional, but it helps to keep the polenta soft after cooking, while the polenta cools down. The polenta will become stiffer, the longer it stands or cools, so the best is to serve this polenta straight away, after preparation.
