Ladies and gentlemen, allow me to entertain you with this healthy muffin recipe. After spending hours searching for a healthy muffin recipe, and not finding what I was looking for, we decided to invent our own version of this popular recipe.

This healthy muffin recipe is popular for many different reasons. Mostly, because it is very healthy, then because it tastes good, then because it has caused a craze on social media.

This recipe has also made me very popular at work. Because I work remotely, I only go into the office once a week. When I do, I always come equipped with a dozen, or more, of these healthy muffins. I share the muffins as a gift with my coworkers, as a token of my appreciation for their friendship. Now, after a while, people start asking me when I will come into the office again. I wonder why?

  1. Combine the all-bran flakes and the milk and allow to soak for half an hour
  2. Preheat the oven to 200°C
  3. Add the egg and the Canola oil to the milk mixture and mix to combine well
  4. Add the remaining ingredients and beat until combined
  5. Prepare a muffin baking pan with non-stick cooking spray
  6. Pour the prepared muffin mixture into the muffin pans
  7. Bake in the preheated oven for 20 minutes, or until the muffins are golden brown. Serve hot, or cold.
