This chicken pot pie recipe is another of our most popular chicken recipes of all time. Chicken pot pie is not the same as what they call Pennsylvania chicken hash. Chicken pot pie is a creamy chicken and vegetable filling topped with pastry and baked in the oven to golden deliciousness. 


Many people claim parentage to this chicken pot pie. I, for one, can remember my granny baking chicken pot pie when I was still a little boy. It is not a new recipe and has been around for ages. The history of this recipe goes back centuries. We have only recently perfected this recipe and with readily available pastry, simplified the preparation of this classic dish. This creamy mushroom chicken recipe is also one of the top 10 favourite chicken recipes of all time.

  1. Prepare the Chicken Filling
    Rub the chicken insides with the lemon half and place the chicken in a deep pot. Cover the chicken with salted water, and add the inion and celery leaves.
  2. Increase the heat to boil over moderate heat and regularly skim off the sum that forms on the surface.
  3. Simmer until the chicken is tender. About 45 minutes and leave the chicken in the pot to cool.
  4. Cut the meat into bite sized pieces and reserve the broth.
  5. Combine the carrots, onions, and potatoes in a saucepan and cover with salted water. Simmer for 10 minutes, covered.
  6. Drain and arrange the chickin and cooked vegetables in a large shallow baking dish. Season to taste with salt and pepper and sprinkle with the marjoram and parsley.
  7. Prepare the Sauce
    Scoop out two cups of the leftover broth.
  8. Melt the butter in a frying pan over medium heat and whish in the flour. Simmer for 1 minute.
  9. Whisk in the broth and reduce the heat to low and simmer, whisking often, until lightly thickened. Season to taste with salt and peper.
  10. Pour over the chicken and allow to cool while you preheat the oven to 450°F.
  11. Roll the pastry out thin on a prepared work surface into a slightly larger size that the baking dish.
  12. Place the pastry over the baking dish and trim as needed. Chill the baking dish in the refrigerator until the oven is is hot and ready.
  13. Bake in the preheated oven for 15 minutes, reduce the heat to 375°F and bake until the pastry is golden brown all over.
  14. Serve hot with cooked rice and a garden salad. Enjoy!
