Directions
- Cook the spaghetti in salted boiling water until al dente, according to the packaging instructions.
- In a mixing bowl, combine the egg yolks and parmesan until well incorporated and set aside.
- In a frying pan, cook the pancetta until crispy. Remove the pancetta and leave behind the fat.
- After the spaghetti pasta has cooked, reserve a quarter of a cup of the pasta water. Drain and rinse the spaghetti well under running water.
- Transfer the spaghetti to the frying pan with the leftover pancetta fat, and add the garlic. Toss over low heat for a minute or two then remove from the heat. Stir through the egg mixture and add a little of the leftover spaghetti water to emulsify the sauce.
- Season to taste with salt and pepper, add the pancetta, and toss to mix well.
- Serve with parmesan on the side. Enjoy!
